  • 1.54 lbs potatoes
  • 4 eggs
  • 2 shallots
  • 4 tbsps extra virgin olive oil
  • 2 tsps parsley
  • 2 pinches salt
  • 2 pinches pepper

How to prepare crispy potatoes with eggs

  • Prepare the crispy potatoes with eggs starting with the potatoes, if you use new potatoes you can leave them with the skin otherwise wash them very well and peel them.

  • Rinse the potatoes very well to remove excess starch then dry them and cut them into small chunks.

  • Roughly chop the shallots.

    Heat the extra virgin olive oil in a large pan with high edges and toss in the potatoes, letting them brown for a few minutes on one side.

  • Turn them with a spatula, add the shallots and let everything go, either by shaking the pan or turning the potatoes with a spatula.

  • It will take about 15 minutes, when the potatoes are browned on all sides insert a fork into some pieces to check the cooking.

  • Once cooked, make holes between the potatoes to insert the eggs, break them gently to avoid spreading the yolk, season with salt and pepper.

  • Lower the heat and with the lid on cook for 3 or 4 minutes until the whites are set but the yolks are still soft, garnish with freshly chopped parsley and..
