  • Separate the yolks from the whites. In a bowl, combine the yogurt, half of the sugar, and the lemon zest with the yolks and mix well.

  • Incorporate the sifted flour and starch, mixing until a homogeneous mixture is obtained. Whip the egg whites until stiff peaks form with the remaining sugar. Carefully fold the whipped egg whites into the mixture, a little at a time, with movements from bottom to top to avoid deflating them.

  • Line the mold with parchment paper and pour the mixture inside. Wrap the mold with aluminum foil to avoid water entering. Place the mold in a larger pan and add water up to half the mold (bain-marie cooking). Bake in a preheated oven at 320°F for about 1 hour. Check the cooking with a toothpick: it should come out dry.
