Lucca fried doughnuts are a wonderful delight, the mythical doughnuts you eat at fairs…. and since September is fair month in Lucca, I satisfied my craving and made them. In Lucca, they are eaten all year round.

Ingredients
- 3 cups flour
- 0.5 oz fresh brewer's yeast
- 0.4 cup warm milk
- 2 eggs
- 4 tbsps butter at room temperature
- 0.25 cup sugar (+ for decorating to taste)
- 1 pinch salt
- grated zest of 1 lemon
- to taste vegetable oil

Preparation Lucca Fried Doughnuts
Let’s see how to prepare Lucca fried doughnuts
To prepare the dough for the doughnuts, first dissolve the fresh brewer’s yeast in the milk, then arrange the flour in a mound in a bowl or on a work surface. Add the eggs and all the ingredients except the decorating sugar and oil and start mixing with a spoon, then work well with your hands until you get a smooth and elastic dough ball. If necessary, knead on a work surface. Make a cut on top of the dough and let it rise until doubled, covered with a towel.
Once doubled, roll out with a rolling pin creating a sheet about 0.2 inches thick. Now, with the help of 4-inch cookie cutters, cut out the doughnuts, and with smaller cutters, make a hole in the center. At this point, cover the doughnuts with a towel and let them rise at least until they have doubled in volume.
Take a tall and somewhat narrow pot and heat the oil; as soon as it is hot, fry the doughnuts, turning them on both sides. When they are nicely golden, place on absorbent paper, then roll them in granulated sugar.
Notes
I recommend eating them hot because they are fabulous that way, but if you have leftover doughnuts or fritters, store them in a closed container for a maximum of 2 days, then just heat them for a few seconds in the microwave.
