Legend has it that the recipe was prepared by a nun for a sister with digestive problems, considering there is not even any yeast. Ingredients

  • 14 oz ricotta (fresh and of very good quality)
  • 1.5 cups almond flour
  • 4 eggs
  • 2/3 cup sugar
  • to taste lemon zest

How to prepare the Original Nun Cake

  • In a large bowl, pour the ricotta, eggs, and salt. Beat with whisks, mixing until you get double the volume.

  • Next, add the almond flour and mix well.

  • Take a pan of about 8 inches, square or round, it doesn’t matter. Line it with parchment paper, then pour the blended mixture into the pan.

  • Bake in the preheated oven at 340°F for about 45 minutes. Once done, remove from the oven and dust generously with powdered sugar.

Storage and Tips for the Original Nun Cake

The nun cake can be stored at room temperature under a cake dome for up to 3 days. For those with a sweet tooth, you can enrich it with chocolate chips and flavor it with a couple of tablespoons of limoncello or cinnamon powder.
