Ingredients
- 2 eggs
- 1 cup sugar
- 1 1/4 cups all-purpose flour
- 1/4 cup extra virgin olive oil (or vegetable oil)
- 1 teaspoon baking powder
- 2 tablespoons ricotta
- 1 tablespoon limoncello (limoncello cream or lemon juice)
- 1 apple
- 1 tablespoon water
Preparation
By glass, we mean a paper cup.
Beat the eggs with the sugar until they are frothy.
Add the sifted flour with the baking powder gradually, alternating with the oil.
Add the ricotta, the limoncello cream or lemon juice, mix everything well and add the water.
Mix again, the batter is thick, not liquid, but you can add more water or milk if it seems too thick.
Peel one or two apples and dice them, add them to the mixture, and pour it into a greased and floured 8-inch pan, my photo shows a 7-inch pan.
Sprinkle with sugar, bake in a preheated oven at 350°F for 40 minutes in an 8-inch pan, for a 7-inch pan it’s better to extend the time to 30 minutes.
Always do the toothpick test before removing from the oven.
