If you’re looking for a quick, light, and super crunchy dessert, these Crunchy Cookies in Air Fryer are perfect for you. They are made with a few ingredients that we almost always have in the pantry, without butter, without eggs like my Fake Cookies and Yogurt Cookies, and if you don’t have an Air Fryer you can easily make them in the oven.

Perfect for breakfast, to dip in milk, or for a last-minute sweet break:
golden on the outside and crispy on the inside, with an irresistible texture… one leads to another!

The great thing about these Crunchy Cookies in Air Fryer is that they can be customized based on personal taste and what’s available in the pantry, or try a different version each time for a new recipe.

Ingredients

Ingredients for 13 cookies

  • 1 1/3 cups all-purpose flour
  • 1/2 cup sugar
  • 3 1/2 tbsps sunflower oil (or corn oil)
  • 3 1/2 tbsps 2% milk
  • 3 1/2 oz white chocolate
  • 2 1/2 oz rolled oats
  • 1 3/4 oz blanched almonds
  • 1/2 packet baking powder
  • 1 pinch salt

Steps

Preparation of Crunchy Cookies in Air Fryer

  • Pour the flour, sugar, baking powder, oats, almonds, and roughly chopped white chocolate into a bowl

  • Mix with a spoon and add the sunflower oil

  • Add the milk and blend the ingredients with your hands. You will not get a compact dough, but don’t worry, this is normal

  • Take a piece of dough, form balls, and flatten them with the palm of your hand, continue until the dough is finished

  • Preheat the air fryer to 340°F with bake or air fry program and place the cookies on the tray or grill spaced apart

  • Cook at 340°F for 12 minutes, then increase the temperature to 355°F for 2 minutes

  • Let them cool slightly before transferring them to a cooling rack and a plate to cool completely

Baking in Oven

Bake in a preheated oven at 355°F for 15 minutes then at 375°F for 2 minutes. Adjust according to your oven, times may vary by a few minutes

Storage

The Crunchy Cookies can be stored for several days well closed in an airtight container or a tin cookie jar

Tips

The dough will be crumbly, but don’t worry, you will be able to form the cookies without any difficulty.

Do not transfer the cookies while hot as they might break, they will harden as they cool

You can make smaller cookies to get more pieces

Variations

You can replace white chocolate with dark or milk chocolate; instead of the bar, use chocolate chips; replace white with dark or milk chocolate or mix white and dark chocolate.

If you prefer a slightly less caloric version, you can replace the chocolate with 80 g of raisins softened in warm water for 10 minutes and well drained

You can replace almonds with other dried fruits: hazelnuts, walnuts, and pistachios

For a more rustic taste, use whole cane sugar.

You can replace milk with plant-based beverages for a 100% vegan version.
