Ingredients for the orange plum cake without milk and butter
- 4 oranges
- 3 eggs (medium)
- 2/3 cup + 1 tbsp cup granulated sugar (about 140 g)
- 5 tbsp vegetable oil
- 1 sachet baking powder
- 1/2 cup + 1 tbsp cup cornstarch (about 70 g)
- 1 3/4 cups all-purpose flour (about 230 g)
- 1 pinch salt
Tools to prepare the orange plum cake without milk and butter
- 1 Mixer electric mixer
- 1 Plum cake pan plum cake pan
- 1 Parchment paper parchment paper
- 1 Citrus juicer citrus juicer
Steps
Start by washing the oranges well and juicing them with the citrus juicer. Set the juice aside.
In a bowl, break the eggs and beat them with an electric mixer together with the sugar. Let the mixer run until the mixture becomes light and frothy; at this point add the vegetable oil and continue mixing with the beaters.
Now, keeping the mixer at medium speed, gradually add the flour, baking powder and cornstarch, until everything is well incorporated into the batter.
To finish, add the orange juice in a thin stream. The batter will be semi-thick; complete with the pinch of salt.
Pour the batter into a loaf pan lined with parchment paper and bake in a convection oven at 338°F (170°C) for 50 minutes. Before removing from the oven, perform the toothpick test.
Various tips
To make this cake even more aromatic, in addition to the orange juice you can also add the grated peel of orange and lemon or a pinch of vanilla powder.
With the same batter you can also make super-soft muffins: just use the appropriate tin and bake in a conventional (static) oven at 356°F (180°C) for 35 minutes.
Food organizer tips – Questions & Answers
How to store the orange plum cake to keep it soft longer?
Once completely cooled, the orange plum cake should be stored wrapped in plastic wrap or inside an airtight container. This way it stays soft and fragrant for 3–4 days at room temperature. Avoid the refrigerator, which tends to dry out the crumb: it’s better to keep it in the pantry away from heat sources. Cut only the slices you need to preserve its softness.
Can the orange plum cake without milk and butter be frozen?
Absolutely yes. The plum cake freezes very well, already portioned. Wrap each slice in plastic wrap and then place them in a freezer bag. It keeps for up to 2 months. To eat, just let it thaw at room temperature or put it in the microwave for one minute: it will become soft and fragrant as if freshly baked.
