Irish stew – Traditional Irish Recipe

The Irish stew, the Irish mutton stew is one of the most representative dishes of traditional Irish cuisine: a rustic, hearty stew deeply linked to Ireland’s rural history. Prepared with just a few simple ingredients – mutton, potatoes, onions, and carrots – it tells of an essential cuisine, born to nourish and warm during the long cold months.
Slow to cook but rich in flavor, the Irish stew is a convivial dish, perfect for the cold seasons and ideal to serve as a one-pot meal, accompanied by rustic bread or soda bread.

Ingredients

  • 2.2 lbs mutton (stew meat)
  • 1.75 lbs potatoes
  • 2 onions
  • 2 carrots
  • 4 cups vegetable broth
  • to taste salt
  • to taste pepper
  • to taste thyme
  • to taste parsley

Tools

  • 1 Lid

Steps

  • Place the coarsely sliced onions at the bottom of a large casserole, add the meat, and season with salt, pepper, and thyme.
    Cover with carrot slices and large chunks of potatoes. Add a bit more salt, pepper, and thyme. Pour in half of the broth.
    Bring to a boil, cover with a lid, and then lower the heat. Let it simmer gently for 2–2.5 hours until the meat is very tender. Make sure the meat doesn’t dry out too much, adding the remaining broth gradually.
    Gently stir occasionally and serve hot with fresh chopped parsley.

Tips

The Irish stew can be stored in the refrigerator for 2–3 days. It tastes even better when reheated, as the flavors become more intense and harmonious.

With lamb: a milder version popular outside Ireland.

More brothy: add more liquid for a soup-like consistency.
