The tuna belly is obtained from the fattest part of the animal, which wraps around the abdominal cavity: the muscle bundles are interwoven with “good” fat that makes the meat softer and tastier.
If you can’t find the belly, you can also make this dish with other less prized parts of the tuna, or with little tuna or bonito, or even the belly of the albacore.

- 2 cups cherry tomatoes
- 5.3 oz green olives in brine (pitted)
- 1 oz salted capers (previously desalted)
- to taste roast herbs
- to taste dried oregano

- Strainer

Preparation: Tuna Belly with Mediterranean Aromas
Cut the cherry tomatoes in half.
Desalt the capers in running water.
After desalting them, drain the excess water in a strainer.
Do the same with the olives.
Slice the onion into thin wedges.

For this dish, as you can see from the ingredients, I didn’t use either salt or oil,
because the saltiness will come from the capers and olives,
while the oil will come from the fat contained in this part of the fish. But if you don’t use the belly, you should add a drizzle of extra virgin olive oil.
If cooking in the oven or combi microwave
Place the fish in the center of a baking dish, with all the ingredients around, and with the oregano and roast herbs well distributed on top.
Bake in a fan oven at 356°F for 20 minutes, turning the fish halfway through cooking.
In combi microwave grill and microwave for 15 minutes at maximum power, turning the fish halfway through cooking.
For cooking with Bimby, you will need to put 700 g of water in the bowl.
