  • 4 tomatoes

  • extra virgin olive oil

  • Let’s start preparing the eggs with spring onions; wash and thinly slice your spring onions and place them in a pan with extra virgin olive oil, chopped tomatoes.

    Let everything brown for a few minutes, then add the water and cook the onions.

    Once the onions are cooked, gently crack the eggs, being careful not to break them, and season with salt

Cover with a lid and let cook for a total of 5-6 minutes. The cooking time of the eggs varies according to your taste. If you prefer a firmer egg, extend the cooking by a few minutes, but do not exceed 10 minutes.
