Tiramisu is one of the most loved desserts in the world. The original recipe for the cream requires eggs and mascarpone, but over time many delicious variations have been created, even with fruit or with pumpkin. This time, however, I wanted to make a totally vegan-friendly version, incredibly creamy and velvety, thanks to a very special ingredient: aquafaba.
The magic of aquafaba
Aquafaba is nothing more than the cooking liquid of legumes, particularly chickpeas. It is rich in proteins, flavorless, and perfect for those following a vegan diet or those intolerant to eggs.
Once whipped with an electric mixer, it becomes soft and foamy just like egg whites, and it is ideal for creating desserts and recipes without using animal products.

- 7 oz plant-based drink
- 3 tbsps all-purpose flour
- 3 tbsps sugar
- 1 pinch turmeric powder (for coloring)

- 7 oz whipping plant-based cream
- 3.5 oz Aquafaba (cold)
- 1 tsp cream of tartar
- unsweetened cocoa powder (for dusting)

Steps
Follow these simple steps to make the vegan tiramisu
Prepare the cream: Put the flour, sugar, and the chosen flavoring in a small saucepan and mix everything together, then add the plant-based drink, stir and let it thicken on the stove. Once ready, remove it and let it cool.
Prepare the aquafaba: In one bowl, whip the cream and in another bowl, whip the aquafaba. When it begins to swell, add the cream of tartar. It’s ready when it has the consistency of stiff egg whites. Whip the cold cream with an electric mixer, then add the cream first, followed by the aquafaba.
Assemble the tiramisu: Dip the cookies in the coffee, place them in the dish, and then cover with the cream, dust with cocoa, and proceed with another layer, continue until all the cream is used. Let the dessert rest in the fridge for at least 30 minutes before serving.
