Light Fruit Rolls

The light fruit rolls are a light and healthy treat for breakfast or a snack, perfect for the entire family.

The dough for the rolls contains no eggs, no milk, no oil, and no butter, and instead of sugar, I used erythritol.

Do you know what erythritol is? A sugar substitute that doesn’t add calories and doesn’t raise blood sugar levels, but its taste and appearance are just like sugar.

I’ve been using it for a while, and to be honest, I only use it for making desserts due to the conflicting opinions about frequent usage.

Returning to the light fruit rolls, they are perfect for those on a diet, and I assure you that the taste won’t make you miss traditional and super-caloric sweets.

They are filled with a layer of bitter orange marmalade and topped with fresh fruit cubes, the perfect dessert to make with summer fruits like apricots and nectarines.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/3 cup potato starch
  • 3/4 cup erythritol
  • 1/2 cup 0% fat Greek yogurt
  • 1/3 cup almond milk beverage
  • Half packet baking powder
  • lemon juice
  • 1 cup bitter orange marmalade
  • 2 nectarines
  • 3 apricots
  • as needed confectioners' sugar

Instructions

  • In a bowl, mix the flour with the potato starch and baking powder. Add the rest of the ingredients in the center: yogurt, almond milk beverage, lemon juice, and sugar.
    Start kneading in the bowl first, then when the dough begins to form, continue on a work surface.
    You will get a smooth and soft dough.
    Let it rest for 15 minutes.

  • Prepare the fruit by washing and cutting it into small cubes, remove the skin from the apricots.

  • Begin rolling out the dough and form a rectangular sheet about 1/8 inches thick.

  • Spread the orange marmalade and then evenly sprinkle the fruit cubes.

  • Roll the dough over itself and cut into pieces each about 3/4 inch thick. Place the rolls on a baking sheet lined with parchment paper.
    Bake at 350°F for 20-25 minutes.
    Once cooled, dust with confectioners’ sugar.

The light fruit rolls will bring color and flavor to your breakfast. Once prepared, store them in the fridge for good and perfect preservation for a few days.
