Tools

Recommended Tools

  • 1 Air fryer
  • 1 Electric mixer
  • 2 Bowls
  • 1 Sieve
  • 1 Knife
  • 1 Plumcake mold nonstick 4 x 10 inches
  • 1 Spatula
  • 2 Spoons
  • 1 Toothpick

Steps

Preparation of Two-tone Plumcake with Walnuts, Chocolate, and Nutella Heart

  • Before starting, I suggest you prepare the walnuts and chocolate, coarsely chopped, so they are ready to add to the mixture
In a large bowl, with the electric mixer, beat the eggs with the yogurt

  • Add the sugar gradually and mix until you get a light and frothy mixture

  • Incorporate the sifted flour and baking powder, add a pinch of salt, and continue beating with the mixer until you reach a smooth and lump-free batter

  • Add the walnuts and chocolate to the mixture

  • Gently mix with a spatula

  • Pour half of the mixture into another bowl, keep one aside, and add the sifted cocoa and 3 tablespoons of milk to the other. Mix well with the spatula

  • Grease and flour the mold, and with the help of a spoon, pour the batter alternating the white and chocolate one, forming a sort of checkerboard.
Distribute the Nutella in the center, leveling it without reaching the edges, then cover again, alternating the two batters, pouring the chocolate one over the white and vice versa.

  • With a toothpick, make light spiral movements to create the two-tone effect.

  • Baking:
    – Air Fryer: preheat the air fryer for 2/3 minutes and place the mold on the grid. Bake with bake or air fry program for 40 minutes. Check with a toothpick test in multiple spots, not before 30 minutes. If dry, it’s cooked; otherwise, continue baking.
    – Oven: preheat at 356°F for 45/50 minutes. Always do the toothpick test, if you extract it dry, the plumcake is ready; otherwise, continue until fully cooked.
Remember that there is Nutella in the center, so if it’s not dry when piercing in that spot, it’s completely normal.

  • Leave the plumcake with the oven or air fryer door slightly open for 5 minutes before taking it out

  • Let it cool completely and unmold it

  • Slice it and serve. A soft, tender, and moist plumcake, perfect for sharing with whoever you want 💕

Storage, Tips, and Variations

Storage

The plumcake stays soft for several days (if it doesn’t disappear immediately 😁) under a cake dome or wrapped in plastic wrap

Tips

You can adapt the mold if you don’t have a plumcake mold: a round cake pan with a diameter of 9 inches is perfect to replace the plumcake mold.
The larger the diameter, the shorter the cake; the smaller, the taller and longer it will take to bake.

The Nutella in the center can give false signals with the toothpick test: if you pierce the center and it doesn’t come out dry, it’s normal. Check the baking also at the edges and at the highest point of the cake.

Tip for optimal baking in air fryer especially with one resistance (so at the top): use aluminum or nonstick molds as they are the best heat conductors. Avoid silicone and lining the mold with parchment paper.

Leave the mold to rest for 5 minutes with the door ajar before taking it out of the oven or air fryer, so the cake doesn’t risk collapsing.

Variations

Chocolate:

dark: for a more intense and less sweet result, ideal for those who love strong flavors.
– milk: perfect if you prefer a sweeter cake.
– white: gives a delicate and enveloping note, also great paired with dark chocolate.
Mix of chocolates: dark, milk, and white together

You can use chocolate bars or chips

Nuts

Use walnuts, hazelnuts, or almonds according to your taste; you can also make a mix based on what you have available. You can add some on top before baking for an even crunchier texture.
