Let’s see how to prepare the cake.
First, wash the apples well. Melt the butter and let it cool a bit before using it. In a large bowl, beat the eggs and sugar well with a whisk, then add the butter, mixing well, and the grated lemon zest. Sift the flour, baking powder, and salt and start adding to the mixture, mixing vigorously; the mixture should be nice and smooth. Take 1 apple and cut it into thin slices and the other 2 into small pieces, squeeze some lemon juice on them to prevent browning. Add the diced apples to the mixture, mixing well. Grease and flour a pan and pour in the mixture, spreading it well. At this point, place the apple slices on top. Bake at 356°F in the hot oven and cook for 35/40 minutes.
Notes
Remember when using lemon or orange peels, it’s advisable to use organic, untreated products, otherwise wash the peels thoroughly before use.
The cake keeps for 4/5 days either in the turned-off oven or in a suitable container.
