  • In a large bowl, mix flour, sugar, almond flour, baking powder, vanilla, lemon zest, orange zest, and cocoa. Add oil, plant-based beverage, and almond flavoring.

  • Knead until you get a smooth and compact dough. Wrap the dough in plastic wrap and let it rest in the refrigerator for about 30 minutes.

  • After the time has passed, take some dough at a time and shape into balls of the desired size. Arrange them on a baking sheet lined with parchment paper, spacing them well. Bake in a preheated oven at 350°F for about 20 minutes, until the cookies are slightly golden. Let them cool completely. Spread some peanut butter on half of the cookies and pair them with the other halves, forming sandwiches. You can also use jams or other spreads to vary the filling.

  • Enjoy your meal!

Storage:

Vegan cookies can be stored in an airtight container at room temperature for 3-4 days. To keep them soft, you can add a piece of apple or bread to the container.

Freezing the already filled cookies is not recommended, but the raw dough can be frozen and baked later.
