Ingredients
- 4 cups all-purpose flour
- 0.7 oz fresh yeast
- 1 tsp fine salt
- 0.42 cups water
- 3.2 tbsp sugar
- 2 large eggs (2 eggs)
- 3 tbsp soft butter
- 2 cups custard cream

Preparation
Start mixing using the stand mixer;
Start the mixer and pour the water slowly until completely absorbed;
Even if the dough may be slightly crumbly, go ahead and add the eggs and butter and continue mixing until absorbed;
Place the compact dough in a bowl and cover it with plastic wrap;
Let it rise in the fridge for 10 hours;
After the time has passed, let the dough sit at room temperature for 15 minutes;
Roll out into a rectangular shape on the work surface and fold the two shorter sides towards the center, then let it rest for another 5 minutes;
Roll out the dough again and make two more folds;
Use a cookie cutter to make discs and let them rest for about an hour and a half;
Transfer the discs onto parchment paper;
In the meantime, prepare the custard cream;
Cut the parchment paper around each donut and immerse them in the oil;
Fry the donuts for about 4 minutes until golden and once ready, fill them with cream and sprinkle with powdered sugar.
If you have any leftovers, you can store them in the fridge covered with plastic wrap for a couple of days.
