Today I prepared Sardinian Fregula with Mussels.
Sardinian Fregula is one of the typical dishes of Sardinia. The most famous is certainly Fregula with clams. Today I prepared it with mussels. Delicious.
There are many variations of Fregula with Mussels, with fresh tomatoes, with canned tomatoes, or white without sauce as I prepared it.
Some prefer it drier, and some prefer it more soupy, to be eaten with a spoon. I must be honest, I prefer fregula with mussels nice and soupy. A kind of soup.
The addition of chili is optional.

Ingredients
- 12.3 oz Sardinian Fregula
- 7 oz mussels (cooked and shelled)
- as needed chopped garlic and parsley
- as needed olive oil
- as needed fine salt
- 4 cups fish broth

Steps
Clean and wash the mussels, open them over high heat and remove the shells. Sauté them with the chopped garlic and parsley for about 3 minutes. Add 3 tablespoons of filtered mussel cooking water.
Add the Fregula.
And cook by gradually adding the broth. Cook for about 10 minutes.
Serve hot.
