Semolina Gnocchi

Semolina gnocchi, super quick to prepare, this recipe will allow you to bring a fresh pasta dish to the table in no time. They are made with durum wheat semolina instead of all-purpose flour. The result is equally good and versatile, perfect with any seasoning you can think of. It’s a quick recipe; you’ll just need a handful of minutes to get the perfect dough for making gnocchi.
To get perfect gnocchi, the key is the right ratio of water to flour, which is: 200 g of flour you will need to add 200 ml of water.

  • 4 cups durum wheat semolina
  • 2 cups water
  • 1 pinch salt

  • 1 Pastry board
  • 1 Scraper
  • 1 Gnocchi board

Steps

Let’s start preparing

  • Let’s start preparing the durum wheat semolina gnocchi: heat the water with the salt and, when it boils, sprinkle in the flour stirring quickly with a wooden spoon.

    Once all the water is absorbed, turn the dough onto the work surface and knead quickly by hand until you get a smooth dough.

  • Take the dough again, divide it into pieces, and create ropes about 0.8 inches thick, then cut them into pieces.

    Once the gnocchi are ready, quickly roll them over a gnocchi board

    The semolina gnocchi are ready; now you just have to cook them and season them as you like.
