Ingredients
- 5.64 oz pasta
- 2 potatoes
- 3.53 oz smoked salmon
- 2 tbsp milk
- parsley (or chives)
- extra virgin olive oil
- salt
- pepper

Preparation
Wash and peel the potatoes. Cut them into chunks and boil them in salted boiling water for 7-8 minutes.
Drain them, place them in the glass of the immersion blender and blend until you get a puree.
Transfer the cream to a pan, on low heat (1), add the milk, a drizzle of oil, salt, and pepper. If desired, you can enhance the yellow color with a pinch of turmeric or saffron.
Cut the salmon into strips, add it to the potatoes (2), stir and turn off the heat.
Cook the pasta in salted boiling water, for the necessary minutes.
Drain it and pour it into the pan with the sauce. Add a handful of chopped parsley (or chives) and mix well to combine. If necessary, add a bit of pasta cooking water.
The pasta with potato cream and salmon is ready, serve it on plates and serve immediately… enjoy your meal!
Tips and Notes
The addition of milk is not essential, you can replace it with water or vegetable broth. If the potato puree is already creamy enough, you can omit it.
You can also use fresh salmon, just cut it into chunks, brown it separately for a few minutes and then add it to the cream.

What pasta shape is best?
All semolina pasta shapes are fine, I chose calamarata, but paccheri, fusilli, penne, shells, or even linguine are also good if you prefer long pasta.
Can I add garlic or onion?
If you like, you can sauté a small piece of onion (finely chopped) with a little oil before adding the potatoes.
