Microwave Lentil Meatballs in Tomato Sauce is a variation of my Microwave Meatballs that I have revisited in a very easy-to-cook vegetarian version.
The lentil meatballs cook in just 8 minutes if you want to eat them plain without tomato, but if you enrich them with my Microwave Tomato Sauce, you only need to add 10 more minutes of cooking, to obtain a tasty second course that can also be served as a single dish, or why not, as a condiment for your Microwave Tomato Pasta.

Ingredients
- 12 oz cooked lentils
- 1 1/4 cups seasoned breadcrumbs
- 1 egg
- extra virgin olive oil
- 14 oz canned tomatoes
- Half onion
- extra virgin olive oil
- salt
- basil

- 1 Microwave Oven with combination function
- 1 Pot microwave heating
How to Prepare Lentil Meatballs in Tomato Sauce
Peel the onion and slice it thinly. Peel the garlic clove and distribute both in the bowl. Add the oil and a pinch of salt, mix and sauté in the microwave for 2 minutes at about 750 watts.
Add the canned tomatoes to the sautéed onion and mash them with a fork, mix and place the bowl in the microwave.
Cook for 8 minutes at 750 watts, stirring halfway through cooking.
If the tomato sauce boils too strongly in the microwave, you can place a microwave splatter cover over the bowl.
At the end of cooking, remove the garlic clove and add the basil leaves.
First, choose whether to use dried lentils and cook them following my guide on how to cook legumes, or use already cooked canned lentils.
Pour the cooked lentils into the blender and blend them into a puree.
Place the lentil puree in a large bowl and add the egg.
Beat the egg with a fork and combine the two ingredients.
Add the seasoned breadcrumbs and mix to obtain a firm mixture.
Grease your hands with a little oil and form the lentil meatballs.
Transfer all the lentil meatballs to a microwave crisp tray and cook, in combination microwave plus grill function for 8 minutes, placing the tray on the microwave riser.
If desired, you can eat the lentil meatballs just like this.
Pour the tomato sauce into the microwave heating pot.
Arrange the meatballs in the tomato sauce and drizzle with a little oil.
Cook in the microwave at 800W for about 10 minutes.
Once ready, let them rest for two minutes with the microwave closed then serve the meatballs piping hot.
Storage
Store the cooked microwave lentil meatballs in sauce in the fridge for up to 3 days.
