Ingredients
- 3.5 oz stale bread (very dry bread)
- 1 clove garlic
- 2 pinches dried oregano
- 2 tbsps olive oil
- to taste chopped parsley

- 1 lb lbs potatoes
- to taste coarse salt
- 2.1 oz grated Parmesan cheese
- 1.4 oz breadcrumbs (crispy and flavored)
- 1 egg

- 1 mozzarella (125 g)
- 3.5 oz cooked ham
- 2.1 oz breadcrumbs (crispy and flavored)
- to taste olive oil (to drizzle over the croquettes)
Steps
Place the dry bread, garlic, parsley, and oregano in a food processor and start chopping everything. Add the oil and a pinch of salt if necessary.
Chop everything until a fairly fine mixture is obtained.
Put a little oil in a non-stick pan, add the flavored breadcrumbs, and toast them well. They should become crunchy. Then put them on a plate.
Wash the potatoes, cut them into chunks, and boil them in plenty of salted water. You can decide whether to peel them before or after cooking. They will be cooked when they can be easily pierced with a fork.
Drain the potatoes, mash them, and put them in a bowl. Add the crispy and flavored breadcrumbs, grated Parmesan cheese, egg, parsley, and ground black pepper. Taste and add salt if necessary.
Mix well until you get a compact, smooth, dry but soft mixture.
Drain the mozzarella and cut it into rather small cubes. Prepare the croquettes by taking about 1.2 oz of the mixture, placing small pieces of mozzarella and ham inside. Close the croquette well, trying to compact it a bit with your hands, and shape it into a cylinder.
Roll the croquettes in the crispy and flavored breadcrumbs.
Place the croquettes on a baking tray lined with parchment paper, drizzle with a little olive oil, and bake at 356°F for about 20 minutes.
