Ingredients

  • 2.2 lbs sweet potatoes (or yams) (3 potatoes)
  • 1 sprig rosemary (chopped)
  • 1 tsp sweet paprika
  • to taste olive oil
  • to taste fine salt
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • to taste olive oil
  • to taste fine salt
  • to taste black pepper (ground)
  • 2 tsps garlic powder
  • 2 tsps dried onion
  • 1 tsp sweet paprika
  • to taste fine salt
  • to taste olive oil

Steps

  • Wash and cut the potato fan-style, making slices about 1/8 inch thick, without cutting all the way through. The slices should remain attached to each other.

  • In a bowl, mix a bit of oil, the chopped rosemary, sweet paprika, and salt, until you get a well-blended seasoning. You can also adjust the amount of paprika and rosemary to your taste. Place the potato on a baking sheet lined with parchment paper, and using a cooking brush, coat the potato with the flavored oil, trying to get it into the gaps between each slice.

  • Wash and cut the potato into wedges, you can decide to make them thicker or thinner, according to your taste.

  • Place the potato wedges on a baking sheet lined with parchment paper, drizzle with a bit of oil, then sprinkle with smoked paprika, cumin, salt, and pepper. You can also adjust the amount of paprika and cumin to your taste. Bake at about 392°F for about 15-20 minutes. Check the cooking, the potato should be tender. To brown the surface, turn on the grill for a few minutes, being careful not to burn them.

  • Bake at about 392°F for about 35-40 minutes. Check the cooking, the potato should be tender.

  • Wash and cut the potato into slices about 1/8 inch thick.

  • Place the potato slices on a baking sheet lined with parchment paper. In a bowl, mix a bit of oil, the garlic powder, dried onion, sweet paprika, and salt, until you get a well-blended seasoning. You can also adjust the amount of seasoning to your taste. Place the potato slices on a baking sheet lined with parchment paper, and using a cooking brush, coat the slices on both sides with the flavored oil. Bake at about 392°F for about 15-20 minutes.
