Steps
Wash and cut the potato fan-style, making slices about 1/8 inch thick, without cutting all the way through. The slices should remain attached to each other.
In a bowl, mix a bit of oil, the chopped rosemary, sweet paprika, and salt, until you get a well-blended seasoning. You can also adjust the amount of paprika and rosemary to your taste. Place the potato on a baking sheet lined with parchment paper, and using a cooking brush, coat the potato with the flavored oil, trying to get it into the gaps between each slice.
Wash and cut the potato into wedges, you can decide to make them thicker or thinner, according to your taste.
Place the potato wedges on a baking sheet lined with parchment paper, drizzle with a bit of oil, then sprinkle with smoked paprika, cumin, salt, and pepper. You can also adjust the amount of paprika and cumin to your taste. Bake at about 392°F for about 15-20 minutes. Check the cooking, the potato should be tender. To brown the surface, turn on the grill for a few minutes, being careful not to burn them.
