Ingredients
- 2.2 lbs gnocchi (fava bean, recipe in the link)
- 2 tbsps butter
- 1/4 cup all-purpose flour
- 2 1/8 cups milk
- 2 pinches fine salt
- 2 pinches black pepper (ground)
- 1/4 cup Parmesan Reggiano DOP (grated)
- 7 oz sweet bacon (diced or cooked ham)
- 2 pinches coarse salt (for gnocchi cooking water)

Melt the butter in a saucepan, add the flour and stir with a wooden spoon until a well-blended roux forms.
Add the milk, salt, pepper, and grated Parmesan.
Cook until it thickens, stirring constantly with a whisk to prevent lumps.
The mixture should be smooth and fluid.
Continue cooking for about 5/10 minutes. Set aside.
In a large pot, add plenty of water, when it boils, add the coarse salt and the gnocchi. Cook for a few minutes, when they float, they are practically done. Drain them well in a colander.
Meanwhile, sauté the diced bacon in a pan for a few minutes.
For plating, start by placing three or four tablespoons of bechamel at the bottom.
Place the gnocchi on the plate over the bechamel, complete the dish with a generous spoonful of crispy bacon.
