Meatloaf in Puff Pastry

Ingredients

  • 12 oz spinach, frozen
  • 2 tbsp butter
  • 1.75 oz onion
  • 2 tbsp Parmesan cheese (grated, about 3 tablespoons)
  • to taste fine salt
  • 3 eggs
  • 3 pinches garlic powder
  • 3 pinches basil (dried leaves)
  • 2 pinches fine salt
  • to taste olive oil
  • 1 lb g ground beef (and pork)
  • 9 oz sausage
  • 3 eggs
  • 1.5 oz bread (3-4 days old)
  • 3 tbsp milk
  • 2 pinches fine salt
  • 2 pinches black pepper (ground)
  • 1.5 oz Parmesan cheese (grated)
  • 1 tbsp breadcrumbs
  • 1 puff pastry (round, 230g)
  • to taste olive oil

Steps

  • Thaw the spinach in the microwave for a few seconds, then chop them into smaller pieces on a cutting board. Clean and finely chop the onion. In a pan, melt the butter, add the spinach and onion. Cook for a few minutes, stirring occasionally. Now add the Parmesan, salt, and let it flavor for a bit. Let it cool completely.

  • Break the eggs into a plate, add the salt, basil, garlic, and beat well. In a pan with a diameter of 12 inches, add two tablespoons of oil, pour in the egg mixture, and cook for a few minutes on each side. Let it cool completely.

  • In a bowl, place the ground meat and sausage with the skin removed, and start mixing them with your hands. Add the eggs, grated Parmesan, crumbled bread soaked in milk, salt, and pepper.

  • Mix thoroughly with your hands until you get a homogeneous mixture. If it seems a bit soft, add a tablespoon of breadcrumbs.

  • Now spread the mixture on a sheet of parchment paper using a rolling pin, placing another sheet of parchment paper on top. You need to make a rectangle measuring 11×14 inches, about 2.5 inches thick.

  • Place the cooled spinach and the omelette on the surface of the meat layer.

  • Start rolling the meat using the parchment paper underneath to help.

  • The closing should be positioned underneath, and seal the edges well with the meat.

  • Now spread the puff pastry, place it over the meatloaf, making it adhere well to the surface.

  • Flip the meatloaf and close the puff pastry well at the bottom and also on the sides.

  • Turn the meat again and make cuts on the surface with a pizza cutter, brush it with oil using a kitchen brush.

  • Bake in the oven at 350°F for 60-70 minutes.

Tips, Advice

The meat mixture should be quite soft, this way the meatloaf will be juicier.

Place the baking sheet on the second rack of the oven; if the puff pastry becomes too colored by the end of cooking, place a sheet of aluminum foil on top.
