Gratinated Papaccelle Peppers

Gratinated papaccelle peppers, a unique type typical of Campania with a sweet and particular flavor, that today I wanted to prepare gratinated. These peppers are also preserved in vinegar or brine and generally consumed after a few months. From a nutritional point of view, peppers provide very few calories, 20 per one hundred grams, and that’s why they are suitable for weight-loss diets. But what can surely be considered a good quality is the vitamin C, so abundant that it exceeds three times the content in oranges and double that in kiwis. The wonderful thing is that the pepper season is long, from April to October, so go ahead and preserve this marvel for the winter too. Necessary Ingredients to Prepare the Peppers

  • 1.2 lbs peppers (small papaccelle)
  • 3 tbsp breadcrumbs
  • 1 tsp fine salt
  • 2 tbsp extra virgin olive oil
  • 8 stems chives
  • 3 sprigs thyme
  • 1 pinch pepper

Steps to Prepare Gratinated Peppers

  • Wash and cut the peppers in half horizontally, empty them of seeds and white filaments, also gently remove the stem.

  • Season them with salt and pepper, chives, and thyme; if you don’t have fresh ones, you can use dried ones. Finish with EVO oil and breadcrumbs.

  • Cook in a preheated oven at 375°F for 20/25 minutes. You can also cook them in the microwave on Crisp mode at maximum power for 15 minutes.

  • And here they are ready to be enjoyed as a seasonal side dish with any dish.
