Mimosa muffins are cute treats that can be made for Women’s Day but are also perfect at other times 🙂

Spring is approaching even though it’s a bit peculiar because a lot of snow has arrived in the mountains and it feels like the height of winter.

This morning I had some free time and since the breakfast dessert was finished, I decided to try these lemon cream-filled treats.

They are simple to prepare and very suitable for serving even on special occasions 😉

Of course, they are butter and egg-free, making them suitable for those with intolerances.

I tried mimosa muffins for the first time and instantly liked them.

The batch I made is for 12 large muffins or 24 small muffins.

Ingredients for Mimosa Muffins

  • 4 cups all-purpose flour
  • 1 cup plain yogurt
  • 1/4 cup water
  • 1/2 cup sugar
  • 3/4 cup vegetable oil
  • 1 packet baking powder
  • 1 lemon zest (grated)
  • 8 lemons (juice)
  • 4 tablespoons all-purpose flour
  • 4 tablespoons sugar

Tools

  • 1 Citrus Juicer
  • 1 Saucepan
  • 1 Spoon
  • 1 Teaspoon
  • 2 Bowls
  • 1 Grater
  • 1 Muffin Tin
  • 12 Paper Liners

Steps for Mimosa Muffins

  • Squeeze the lemons and pour the juice into a saucepan with the sugar.

    Turn on the heat and gradually add the flour.

    Stir with a spoon and cook slowly until the mixture thickens.

    It will take a few minutes.

    Set the lemon cream aside.

    In a bowl, pour the flour, sugar, and baking powder, and stir with a spoon.

    Add the yogurt, oil, water, and the grated zest of a lemon.

    Stir everything with a spoon.

    Take a muffin tin and place paper liners in it.

    With the help of a teaspoon, put some mixture into each paper liner.

    Preheat the oven to 350°F in static mode and bake the mimosa muffins for about 30 minutes.

    Let them cool.

    With the help of a small knife, cut a piece on the surface in the middle and set it aside.

  • Proceed in the same way with all the muffins.

    Crumble the pieces set aside with your hands.

    Take each muffin and cover the hole in the middle with lemon cream
