Fusilli with Cherry Tomatoes, Bacon, and Ricotta is a main course I make when I have little time and the kids want something tasty. The preparation time is just the pasta cooking time, but I assure you the taste will be amazing.

Ingredients
- 11.3 oz rigatoni
- 7.1 oz smoked bacon (diced)
- 7.1 oz ricotta
- 10.6 oz cherry tomatoes (or tomatoes)
- 3 pinches fine salt
- 2 tbsps olive oil
- 2 tsps coarse salt
Preparation
In a pan, place the oil with the washed cherry tomatoes cut in halves or quarters (depending on size), add the salt and cook for about ten minutes over medium/low heat. In the meantime, put plenty of water to boil, add the coarse salt and pasta once it boils.
Now add the diced bacon and sauté it for a few minutes.
Add the ricotta, mix well, and finish cooking for a few more minutes. If it dries out too much, add some pasta cooking water. Drain the pasta al dente with a slotted spoon and transfer it directly to the pan with the sauce.
Mix well, add a bit of cooking water if necessary to better combine the ingredients.
