Air Fryer Baked Stuffed Tomatoes

The air fryer baked stuffed tomatoes are a great summer dish to serve as both an appetizer and a main course.

There are many ways and many tasty recipes for stuffed tomatoes, but I thought of using zucchini, tuna, and even couscous in my stuffing.

The result was more than satisfying both in terms of flavors and especially because by using the air fryer, I didn’t have to turn on the oven, saving a lot of time and avoiding the heat.

Making this recipe is very simple, just have some nice tomatoes to stuff… then the rest are almost all ingredients we usually use… tuna… zucchini (which are now in full season)…

As for couscous, it can be replaced with rice, or with spelt or barley… the important thing is that there is a grain to help bind the mixture.

Ingredients

  • 4 vine tomatoes
  • 1 zucchini
  • 1/3 cup buckwheat couscous
  • 1.75 oz canned tuna
  • 1 tablespoon black olives (pitted)
  • leaves basil (to taste)
  • extra virgin olive oil
  • salt

Steps

  • – Toast the couscous in a pan with a little oil, then transfer it to a bowl, pour over 1/4 cup of hot water and cover. Wait 10 minutes, then uncover and fluff with a fork.

  • – Hollow out the tomatoes after cutting off the top, salt the inside and place them upside down on a cutting board to let them release some of their water; grate the zucchini and combine in a bowl with tuna and tomato pulp.

  • – Add the olives, couscous, a pinch of salt, and basil.

  • – Mix the ingredients, then stuff the tomatoes and lightly oil the surface.

  • – Place the stuffed tomatoes in the air fryer basket, cover with the tops, and cook at 356°F for about 8 minutes.
