I love Chinese cuisine, I like the mix of flavors that the used spices release, I really love soy sauce, the tingle of ginger, and these Chinese Dumplings have all the exotic taste that I find irresistible. The quantity of dumplings is indicative, it all depends on the thickness of the dough and the amount of filling you put inside.
Within the recipe, you will find two types of closures: with the tines of a fork, a method definitely more manageable for everyone, and in a spike pattern, a bit more complicated but more effective. You can also close them with the classic folds, the choice is yours based on your manual skills. An essential tool for cooking is the steamer.

Ingredients
- 4 1/3 cups all-purpose flour
- 1 1/2 cups water
- 2 pinches fine salt
- 3 1/2 oz Carrots (peeled)
- 3 1/2 oz onion (peeled)
- 1 clove garlic
- 16 oz Cabbage (cleaned savoy)
- 1 tsp ground ginger (dried)
- 4 tbsps soy sauce
- 9 oz ground meat (mixed beef and pork)
- 7 oz sausage (pork without skin, you can use all ground meat if preferred)

Preparation
On a work surface, place the flour in a fountain shape, add the salt, and gradually incorporate the water while kneading.
Work the dough until it is smooth and compact.
Now wrap it in plastic wrap and let it rest for about an hour in a cool, dry place.
Wash the carrot and onion, peel them, and cut them into large pieces.
Peel the garlic clove as well.
Finely chop everything and place it in a large bowl.
Add the ground meat and crumbled sausage.
After washing the cabbage, finely slice it or, if you prefer, use a mixer.
Add the cabbage to the meat mixture, season it with soy sauce and ginger.
Mix well to combine all the ingredients.
Let it rest in the refrigerator for about half an hour to allow the flavors to blend.
On a floured surface, roll out the dough quite thin with a rolling pin.
Using a pastry cutter with a diameter of about 3 inches, cut out many discs (I made about 70/80) and place them on a floured surface.
Using the rolling pin, further thin each disc.
Place half a tablespoon of filling in the center of the disc, brush the edge with a little water using a brush, close the dumpling, and seal it well with a fork.
Cover a tray with parchment paper and lightly dust with flour, place the dumplings on top, keeping them spaced apart, otherwise, they will stick together.
Place the cabbage leaves on the steamer basket, arrange the dumplings on top, making sure they don’t touch, otherwise they will stick.
Steam for about 15 minutes.
The dumpling is cooked when the dough starts to become transparent.
Take the dumplings out of the steamer and place them on a tray covered with parchment paper.
Brown them in a pan before enjoying and season with soy sauce.

Suggestions/Recommendations
Make sure to always keep the dumplings spaced apart, otherwise they will stick together.
Obviously, the quantity of dumplings depends a lot on the thickness of the dough and the amount of filling you put inside each one.
