These Strawberry Center Muffins are truly delicious: soft and fluffy, with a truly indulgent surprise inside: a whole strawberry at the center. Try them, and they will surely win you over with every bite. Plus, they are gluten-free and butter-free.

Ingredients
- 1 egg
- 3 1/2 tbsp vegetable oil
- 1/2 cup strawberry yogurt
- 1/3 cup sugar
- 1 1/4 cups rice flour
- 1 1/2 packet baking powder (approx. 8g)
- 6 strawberries
- as needed vegetable oil (for the muffin cups)
- as needed rice flour (for the muffin cups)
Preparation
Beat the egg with the oil in a bowl using a whisk until you obtain a well-mixed batter.
Then add the yogurt, mix again, then the sugar, and whisk until you obtain a smooth mixture.
Finally, incorporate the sifted flour and baking powder. Whisk, trying to incorporate air; the mixture should be slightly frothy.
Grease the inside of the muffin cups with oil (mine have a diameter of 3 inches and a height of 2 inches), sprinkle them with flour, and remove the excess.
Wash and clean the strawberries, remove the stems.
Place a tablespoon of batter at the bottom of the muffin cups, then the strawberry in the center, and distribute the remaining batter among the six cups, filling them a bit more than halfway.
Bake at 350°F for about 20 minutes.

Suggestions/tips
If you want a brighter strawberry color, you can add a few drops of red food coloring, but it is entirely optional and purely aesthetic.
