The Fennel, Orange, and Walnut Salad is a very tasty side dish, light and ideal during a diet. If you like, you can also add black olives or sesame seeds, or finely chopped onion and a bit of wild fennel that will give a truly unique aroma and flavor.

Ingredients
- 2 oranges
- 2 fennels
- 10 walnuts
- to taste olive oil
- to taste fine salt
- to taste black pepper (ground)
Preparation
Wash the fennels, remove the thicker lower part, discard the tougher leaves, and slice them thinly. Now peel the oranges, remove the pith, and slice them into rounds or wedges, as you prefer.
Place the fennels and oranges in a bowl and dress them with a little oil, some pepper, and salt. Then add the walnuts in pieces on top.
Mix well and serve immediately to prevent the fennels from browning.
Tips/Advice
You can choose to add ingredients of your liking, such as olives, or sesame seeds to make it tastier. It will be equally delicious if you add finely chopped onion and wild fennel that will give it a unique taste and aroma.
To dress your salad, you can also prepare an emulsion with orange juice, oil, and salt, whisk until you get a well-blended mixture.
We prefer blonde oranges, but you can use the ones you like the most, such as blood oranges, which have reddish pulp.
