The Raclette

The Raclette is a dish that is usually enjoyed in winter. We love it especially because it is a time of gathering with family or friends. The recipe comes from Switzerland, specifically from the canton of Valais, and the main ingredient is the Swiss cheese called Raclette, which is paired with boiled potatoes, various vegetables, assorted cold cuts, small onions, and pickles. Originally, shepherds during transhumance carried cheese wheels that they cut in half and melted over the fire; the surface would melt, and they scraped it off with a knife (the term raclette derives from the French word racler, which means to scrape). To enjoy it best, we have a special electric machine with a soapstone on top and special containers to melt the cheese. I know you’ll all jump out of your seats, but we often use other cheeses besides Raclette, like Emmental or Casera (a cheese typical of Valtellina).

Ingredients

  • 17.6 oz raclette (Swiss cheese)
  • 17.6 oz sausage
  • 5.3 oz prosciutto
  • 3.5 oz speck
  • 5 potatoes (medium boiled)
  • to taste small onions (grilled in oil)
  • 1.8 oz lardo di Colonnata
  • 3 sausages (total 8.8 oz)
  • 3.5 oz cooked ham

Preparation

  • To best enjoy the Raclette, I recommend choosing the ingredients you prefer. We usually use prosciutto, cooked ham, speck, sausages, lardo, boiled potatoes, sausage, small onions, but you can have fun with whatever you like, maybe adding vegetables like zucchini or peppers.

  • At this point, put the meat and vegetables on the soapstone to cook, and the rolls to warm up. We usually prepare Crescentine (for the recipe click here) that we love with raclette.

    In the containers below, place the cheese in slices or cubes so it melts slowly.

  • And now we assemble the sandwich: Melted Raclette, cold cuts, boiled potato, small onions, and enjoy your meal!

Tips/advice

The cheese to use is Raclette, but allow me to suggest, in case you can’t find it, other cheeses like Emmental or Casera (a cheese typical of Valtellina).
