Epiphany Choux Pastry Treats

Choux pastry is usually used for zeppole or cream puffs, but I’ve heard that the Epiphany Witch also loves sweets, and that’s how these Epiphany Choux Pastry Treats were born. Try making them too!

Ingredients

  • as needed choux pastry (quantities indicated in the recipe)
  • as needed pastry cream (made with 700 ml of milk)
  • as needed colored sprinkles (for decorating)
  • as needed chocolate sprinkles (for decorating)
  • as needed meringues (small colored)

Preparation

  • Prepare the choux pastry (click the link for the recipe) with the quantities indicated in the recipe: 5 eggs, 7/8 cup of water, 1 2/3 cups of flour, 7 tablespoons of butter, and a pinch of salt. Place the dough into a syringe with a wide nozzle. Shape the dough into stockings and hats freehand on a baking sheet covered with parchment paper. Bake in the oven at 350°F for about 30 minutes, placing it on the third rack from the bottom.

  • Prepare the pastry cream (click the link for the recipe) using the specified quantity: 4 egg yolks, 5 tablespoons of flour, 7 tablespoons of sugar, one 0.4 g sachet of vanilla powder, and 3 cups of milk. To fill the cream puffs, you will need a small star-shaped nozzle. Fill the syringe with the pastry cream, decorate both the hat and the stocking with the cream by making small tufts. Finish the decoration with colored sprinkles, chocolate sprinkles, and small meringues.
