Spinach Gnocchi

Spinach gnocchi are a tasty and truly versatile first course. This recipe doesn’t use potatoes to preserve the color and taste of this delicate vegetable. Try them and season them as you like: with meat sauce, a simple sauce, with cheese, you can choose whatever you like best.

Ingredients

  • 21 oz spinach, frozen (cooked)
  • 2.5 cups all-purpose flour
  • 1 egg
  • 2 pinches fine salt

Preparation

  • Place the boiled and frozen spinach on a plate, thaw them in the microwave for two or three minutes.

    Now squeeze them to remove excess water: from 21 oz, I got about 14 oz of squeezed spinach. Do not discard the water, save it in a bowl.

  • In a blender, place the spinach, add about 1/4 cup of water obtained after squeezing them, and blend until finely chopped.

  • On a work surface, place the flour, the chopped spinach on top, the salt, the egg, and knead the ingredients well.

  • You will get a soft dough, but no longer sticky.

  • Always flour the work surface, divide the dough into two or three pieces, form rolls as thick as a finger, cut with a knife into gnocchi about half an inch long.

  • Place them on a previously floured tray.

    For cooking: put plenty of water in a pot, once it boils add the salt and the gnocchi, stir gently, as soon as they rise to the surface and the water starts to boil again, they are cooked. Drain them with a slotted spoon, place them directly on a serving dish and dress them with a sauce of your choice.

Tips/Advice

In this type of recipe, it is not easy to indicate exact quantities, just that the spinach is a little more or a little less watery and the amount of flour may vary. Remember that the dough should be soft but workable, no longer too sticky. Always use flour to prevent it from sticking to the work surface.
