I find the Chicken Breast Rolls with Apples very tasty and with a slightly sweet and sour flavor that I personally love. Ideal to serve for a dinner with friends or even for a family meal. Finger-licking good!!!

Ingredients
- 1.8 lbs Chicken breast (sliced (8 slices))
- 3 tablespoons Parmesan cheese (grated, about 1 oz)
- 2 cups Granny Smith apples
- 2 slices whole grain multigrain bread (about 1.6 oz)
- 3 tablespoons Milk
- 2 pinches berries (red, about 30)
- 1 tablespoon Breadcrumbs (about 0.5 oz)
- 2 pinches Fine salt
- 1 onion (small, about 1 oz)
- 9 oz sweet bacon (diced)
- 2 puff pastry (rectangular, 9.3 oz each)
- 1 tablespoon Mustard
- 1 egg
- as needed milk (to brush the rolls)
Preparation
Place the diced bacon in a pan and sauté for a few minutes. Transfer it to a plate and let it cool.
Clean the apples, cut them into very small cubes and cook them in the pan where you previously sautéed the bacon.
Add salt, crushed pink berries (I put them in a bag and crushed with a meat tenderizer), and chopped onion. Once softened, let them cool on a plate.
In a bowl, soften the two slices of cereal bread previously crumbled by hand with the milk. Add the egg, Parmesan, breadcrumbs, bacon, slightly warm apples, and mustard, mix well with a spoon.
The mixture should not be too compact, but soft and moist.
Place the chicken slices on a surface, if too thick wrap them in tissue paper and pound them with a meat tenderizer. Spread a generous spoonful of filling over the surface.
Roll up forming rolls.
Place the puff pastry on a surface, place the rolls on top, cut the puff pastry into four parts, wrap the filled meat inside and seal the sides well with the tines of a fork.
Brush the surface of the rolls with milk, poke holes with a fork, and place on a baking tray lined with parchment paper at 350°F for 20 minutes on the second rack from the bottom.
For the last 5 minutes, place the tray on the top part of the oven to brown the surface, being very careful not to burn them.
Notes
For this dish, I recommend using slightly tart apples like Granny Smith.
With these quantities, I prepared 8 rolls.
If you prefer, you can also not wrap the rolls in puff pastry, they will still be delicious.
