Cantonese Style Penne Rigate

Since I love Chinese cuisine and enjoy mixing scents and flavors, I wanted to prepare Cantonese Style Penne Rigate, made the same way as rice, but with pasta. We really liked them.

Ingredients

  • 5.64 oz penne rigate
  • 3.53 oz cooked ham
  • 1.76 oz frozen peas
  • 2 eggs
  • 1 teaspoon chives
  • 2 pinches fine salt
  • 1 tablespoon Parmigiano Reggiano DOP (grated, level)
  • 1.06 oz onion
  • 1 teaspoon coarse salt
  • to taste soy sauce
  • to taste olive oil

Preparation

  • Pour about half a liter of water into a pot, add the frozen peas.

    Cook for about 10 minutes, until they become soft.

    Drain them and place them on a plate.

  • Meanwhile, put a pot of water on the heat, which you will use to cook the pasta.

    In the meantime, beat the eggs, add the grated Parmesan, the fine salt, and the chives, continue to beat until well mixed.

  • In a pan, add some oil, pour in the egg mixture and stir, as if you were preparing scrambled eggs, breaking them up well.

    Remove them from the pan and set aside.

  • Cut the ham slices into squares about 0.39 inches per side. Set them aside.

  • Salt the water and as soon as it boils, throw in the pasta.

    Three minutes before the cooking time on the package, drain the pasta, keeping some cooking water aside.

  • Peel the onion and chop it finely. Sauté it in a large pan with a little oil.

  • Place the drained pasta back in the pot with the heat off, add the scrambled eggs, peas, ham, and a bit of soy sauce. Mix well to combine the ingredients.

    Pour the seasoned pasta into the pan with the onion and toss for one or two minutes.

    If it seems too dry, add a bit of cooking water.

Suggestions/advice

You can use ham in chunks or a thick slice of ham and dice it.

We’ve added chives and Parmesan, which we love, and I find they are definitely a great match.
