Ingredients
- 4 chicken thighs (and drumsticks, about 3.3 lbs)
- 2 sprigs rosemary
- 6 pinches fine salt
Preparation
Place the chicken thighs and drumsticks in the pan with the skin side down with the heat off. Remove any remaining feathers from the meat if necessary.
Add rosemary sprigs. Turn the heat to medium, salt the meat on one side, and cook for about half an hour to crisp the skin. Turn the thighs and drumsticks, salt the other side, and cook for another half hour. Serve hot; you can add sauces if you like.
Suggestions/Tips
Make sure to crisp up the skin for a more flavorful dish.
Do not add oil; the chicken will release enough by itself.
