Cheesy Penne with Tomato and Mozzarella (Pizza Flavor) is a very quick dish to prepare, ideal when you don’t have much time to cook and need to use ingredients that are usually in the house. The addition of oregano gives it a delicious taste reminiscent of pizza.

Ingredients
- 7 oz tomatoes
- 1 oz onion
- 2 pinches fine salt
- 8.5 oz penne pasta
- 2 teaspoons coarse salt
- 1 mozzarella (4.4 oz)
- 2.1 oz emmental cheese
- 3.2 oz Parmigiano Reggiano DOP (grated)
- 2 pinches oregano (dried)
- 2 tablespoons olive oil
- 1.8 oz tomato paste (optional)
Preparation
Wash the onion and tomatoes.
Finely chop the onion and dice the tomatoes.
In a pan, add the olive oil, sauté the onion for a few minutes, then add the tomatoes.
Add salt and let it cook for about 10 minutes.
Dice both the mozzarella and the emmental into small cubes.
Bring a large pot of water to a boil, add salt and pasta.
Three minutes before the cooking time ends, drain it using a slotted spoon and add it directly to the pan with the tomatoes.
Reserve the cooking water.
Add the diced mozzarella and emmental to the pasta, trying to distribute them evenly over the pasta and mix well, taking care not to let them stick together.
At this point, add the Parmigiano (and tomato paste if you want it more colorful) and let it cook for another minute.
If the pasta seems dry, add a bit of the cooking water.
Finish the dish by sprinkling your pasta with chopped oregano.
Serve hot.
Tips/Suggestions
You can use cherry tomatoes, cutting them into quarters.
