Ingredients
- 11.5 oz tortiglioni
- 3.5 oz sausage
- 3.5 oz ground meat
- 5.3 oz smoked cheese
- 14 oz cauliflower (boiled)
- 1 clove garlic
- as needed olive oil
- 2 pinches fine salt
- 2 pinches coarse salt
- 2 tablespoons Parmigiano Reggiano PDO (grated)
Preparation
In a pan, sauté the already boiled cauliflower pieces with a little olive oil and a clove of garlic.
It will only take a few minutes; add salt if necessary.
Once ready, remove them from the pan and place them on a plate.
In the same pan, fry the sausage, previously skinned, with the ground meat for a few minutes.
Meanwhile, dice the smoked cheese into small pieces. Then place it on a plate.
Fill a pot with plenty of water, once it boils, add the coarse salt and the tortiglioni.
Cook them al dente (remove them at least two minutes before the full cooking time).
With a slotted spoon, take the tortiglioni from the pot and place them directly into a slightly oiled rectangular baking dish measuring approx. 12 x 9 inches.
Let a little cooking water remain in the dish.
Now stir the pasta with a spoon to mix it with the oil.
Now add the sausage and ground meat, mix so it is evenly distributed.
Now add the cauliflower (remember to remove the garlic clove), the smoked cheese and mix well, trying to distribute them evenly throughout the pasta.
Generously sprinkle the entire surface with grated Parmigiano.
Bake at 356°F for about 15 minutes.
Finally, let the surface gratin for a few minutes.
