These Cookies with Dried Fruit are really tasty, without eggs and with a unique taste. I used apricots, pineapple, and a kumquat (Chinese mandarin) to give them a touch of bitterness, but you can use the fruit you prefer, or even candied fruit, they will be delicious anyway.

Ingredients
- 5.5 tbsp butter
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 pinch fine salt
- 0.35 cups sugar
- 3.5 oz candied fruit
Preparation
In a bowl, put the flour, baking powder, salt, and sugar, and mix to combine the ingredients.
Cut the dried fruit into small cubes.
Add the previously melted butter to the dry ingredients and begin to combine them.
Now add the previously chopped dried fruit and mix with a fork, then knead with your hands until the ingredients are well combined.
You will get a smooth and compact dough, slightly sticky.
Form a roll about 10 inches long, wrap it in plastic wrap, and leave it in the fridge for about half an hour.
Once the time has passed, take the dough out of the fridge, remove the plastic wrap, and cut 25 slices about half an inch thick.
Place them on a baking tray covered with parchment paper and bake for about 10/12 minutes in a static oven at 350°F.
The cookies will be ready when they are golden brown.
Tips/Advice
You can use the dried fruit you prefer, or candied fruit, your cookies will be delicious with both alternatives.
