Fried Sage Leaves in Batter

Fried sage leaves in batter are a real delicacy, easy to prepare, but with a unique taste. You can prepare the batter with very cold sparkling water or always cold beer. This will enhance the taste and crispiness of the sage leaves. If you can use organic ones or those taken from farmers, it is definitely better.

Ingredients

  • 40 leaves sage
  • 3/4 cup all-purpose flour
  • 7 fl oz beer (or very cold sparkling water)
  • 2 pinches fine salt
  • 1 qt sunflower oil

Preparation

  • Wash the sage leaves thoroughly, make sure to use the largest and healthiest ones.

    Place them to dry on a paper towel.

  • To make them dry faster, pat them with another paper towel.

  • Finally, place them on a towel for a few minutes.

  • In a bowl, pour the flour, add the beer little by little, stirring with a whisk.

    Adjust the salt.

    You need to obtain a smooth batter without lumps.

    Dip the sage leaves one by one in the batter, making sure they are well covered on both sides.

    In a large pan, pour the oil, to check if it’s ready, drop a small ball of batter in it, if it quickly rises to the surface, it is hot enough.

    Fry the leaves a few at a time, leaving them for a few seconds, drain them with a slotted spoon and place them on a plate covered with kitchen paper to absorb excess oil.

Tips/suggestions

If you want, instead of beer, you can use sparkling water, but the beer gives the sage leaves more crunchiness.
