Baked Apple Fritters with Lemon Batter

I have found so many apple fritter recipes, but these have a particularity that sets them apart from the others. I wanted a more pronounced, more decisive taste that would enhance the apple flavor without covering it. That’s how my Baked Apple Fritters with Lemon Batter were born; try them, they are unique.

Ingredients

  • 1 lemon juice
  • 1 lemon zest (grated)
  • 1 cup all-purpose flour
  • 1 egg
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 2 apples

Preparation

  • In a bowl, whisk the egg with the sugar.

  • Then add the juice of one lemon (about 2.5 oz) gradually while continuing to whisk.

    Now add the grated zest and mix well.

  • Add the sifted flour with baking powder and keep mixing with the whisk.

    You will obtain a smooth batter, not too liquid, without lumps.

  • Peel the apples, remove the core with an appropriate tool.

    Cut them into slices about 1/4 inch thick; I got about 7 per apple, but it really depends on their size.

  • Put the apple slices in the batter, turn them with a spoon and cover them well.

  • Transfer them onto an oven tray covered with baking paper.

    Bake at 350°F for about 25 minutes on the second shelf from the top.

    They should become golden on the surface.
