These Penne with Cherry Tomatoes, Sausage, and Mozzarella are a super quick dish to prepare, and I guarantee they will disappear in a flash. Make a bit extra, as there will surely be none left.

Ingredients
- 10.5 oz Penne Rigate
- 8.8 oz Mozzarella
- 7.1 oz Sausage
- 7.1 oz Cherry Tomatoes
- 2 tbsps Olive Oil
- 2 tsps Coarse Salt
Preparation
Cut the mozzarella into small cubes and set aside.
Wash the cherry tomatoes, cut them into quarters.
In a pan, add the olive oil, add the cherry tomatoes, and cook for a few minutes.
Now add the sausage after removing the casing and try to crumble it as much as possible, cook for a few minutes.
Meanwhile, in a large pot, add plenty of water, as soon as it boils, add the salt and pasta.
About 3 minutes before the end of the cooking time, drain the pasta with a slotted spoon and put it directly into the pan with the sauce.
Continue cooking for about two minutes, stirring occasionally, if the pasta is dry, add a bit of cooking water.
Add the mozzarella spreading it over the entire surface, otherwise it might clump together.
Stir to combine the ingredients, if dry add a bit more cooking water.
Serve hot.
Tips/Advice
Make sure to cut the mozzarella into fairly small cubes, quickly stir the pasta after adding the cheese to prevent it from clumping together.
