Orecchiette with Mascarpone, Turmeric, Bacon

The Orecchiette with Mascarpone, Turmeric, Bacon was created on a day when I had no idea what to make for lunch. They are truly exquisite, with a hint of turmeric flavor, bacon adding savoriness, and a sprinkle of chopped almonds for crunch.

Ingredients

  • 18 oz Orecchiette
  • 3.5 oz Mascarpone
  • 1 teaspoon Turmeric powder
  • 1 oz Almonds
  • 7 oz Smoked bacon
  • 2 teaspoons Coarse salt
  • 2 tablespoons Parmigiano Reggiano DOP

Preparation

  • In a small pan, fry the bacon. Once ready, let it cool slightly.

    Pass the almonds through a mixer, but do not chop them too finely. They should remain a bit chunky.

    Put plenty of water in a pot, once boiling add two teaspoons of coarse salt and the orecchiette.

  • Meanwhile, place the mascarpone in a bowl and add the flat teaspoon of turmeric powder.

  • Add the two tablespoons of grated Parmigiano.

  • Mix well with a fork, and add half of the almonds previously chopped.

  • Drain the orecchiette slightly al dente, setting aside at least one glass of cooking water.

    Pour them into the container with the dressing.

  • Incorporate the bacon and stir.

  • Stir the pasta well so that it is all seasoned.

    Serve with a sprinkle of chopped almonds and, if desired, grated Parmesan cheese.
