Tortiglioni with white ragu is a dish we love: it is prepared quickly, with few ingredients, it’s very tasty and I recommend cooking a bit more pasta, as it surely won’t go to waste.

Ingredients
- 10.5 oz Tortiglioni
- 1 onion
- to taste Olive oil
- 1 small carrot
- 1 celery stalk
- 7 oz mixed ground meat (beef and pork)
- 3.5 oz Sausage
- 2 teaspoons Coarse salt
- to taste Parsley
- to taste Grated Parmigiano Reggiano (optional)
Preparation
Clean and finely chop the onion and carrot.
Cut the celery stalk into small pieces.
Sauté them in a pan with a bit of oil.
Remove the casing from the sausage and crumble it.
Add the sausage and ground meat to the sauté.
Cook for about a quarter of an hour.
Put plenty of water in a pot, once it boils add the coarse salt and the pasta.
Three minutes before the cooking time is up, drain it with a slotted spoon and put it directly into the pan with the sauce.
Finish cooking, tossing it.
Garnish with a bit of chopped parsley.
If you like, you can add a sprinkle of grated Parmigiano.
