Every now and then I like to vary my dishes and mix ingredients to bring something original to the table. My kids love tripe, but I wanted to try to confuse them with this very special version. The Fake tripe with beans and potatoes contains an omelette cut into strips instead of the classic tripe.

Ingredients
- 2 cups Potatoes
- 4 oz Borlotti beans
- 1 stalk of celery
- 6 Eggs
- 2 teaspoons Coarse salt
- 3 pinches Fine salt
- 1 small onion (approx. 50g)
- to taste Olive oil
- 3 cups Tomato sauce
- 1 teaspoon Sugar
- 2 tablespoons Grated Parmigiano Reggiano
- to taste Chopped parsley
Preparation
Clean and peel the potatoes.
Cut them into cubes about 1/2 inch on each side.
Remove the skin from the beans (I used defrosted borlotti beans).
Clean and finely chop the onion.
In a pot, add some oil and sauté the onion.
At this point, add the tomato sauce and cook for a few minutes.
If necessary, adjust the salt and add a teaspoon of sugar (if it’s slightly acidic).
Now add the beans, potatoes, finely chopped celery, two glasses of water, and cook with the lid slightly open for at least an hour, stirring occasionally.
If necessary, add more water during cooking (if it dries out too much).
In the meantime, prepare the omelette.
In a large pan, add enough oil to cover the bottom.
In a plate, put the eggs, add parsley, Parmesan, two pinches of fine salt, and beat well.
Once the oil in the pan is hot, pour the egg mixture and cook with the lid on for a few minutes.
When the top is no longer liquid, place a lid over the omelette and slide it onto the lid.
Then place the pan upside down over the omelette and flip the lid to turn the omelette and continue cooking the other side.
Continue cooking for about another 5 minutes, until the bottom side is golden too.
Once cooked, place it on a board and cut it into strips lengthwise.
If the strips are too long, cut them again into two or three pieces.
Now check the cooking of the potatoes and beans. If they are almost cooked, you can add the omelette strips.
Let it flavor for a quarter of an hour and then serve hot.
Suggestions/Advice
Check the cooking of the potatoes and beans before adding the omelette: they must be almost cooked.
It is easy for the sauce to dry up during cooking: add water if necessary.
You can also season with a little ground black pepper.
