The Four Quarters Pound Cake is simple, quick, and yields an amazing result: soft, tender, and melts in your mouth. I discovered this batter by chance; I had never heard of it before, but I recommend trying it: you start with the weight of the eggs and add butter, flour, and sugar in the same quantity, which is why it’s called “four quarters.” To make it even tastier, I added a vial of orange flavoring, but you can also replace it with grated orange zest.

Ingredients
- 4 large eggs Large Eggs
- 7.5 oz Butter
- 1 cup Sugar
- 1.5 cups All-Purpose Flour
- 2 tsp Baking Powder
- 1 vial of orange flavoring (2 ml)
- to taste spray butter (cake release spray)
Preparation
In a mixer, place the chopped butter, add the sugar and mix until they are well combined.
Add the eggs one at a time, not incorporating the next until the first is well combined.
Now add the vial of orange flavoring, then gradually the flour with the baking powder, making sure to incorporate the ingredients each time.
The result will be a smooth and slightly whipped mixture.
Grease a loaf pan (dimensions 10.5″x8″x2.4″) with the spray butter (cake release spray).
Bake at 350°F for 40 minutes.
Always perform the toothpick test; it should come out dry, so the pound cake will be cooked.

Instead of the orange flavoring, you can grate the zest of an orange.
