For a quick dinner to prepare, but full of flavor, make these Grilled Salmon Trout Fillets, it will be a light but delicious main course.

Ingredients
- 14 oz salmon trout fillets with skin (4 fillets)
- 0.42 cups concentrated lemon juice
- 1.35 tbsp olive oil
- 1 tsp fine salt
- 4 tsp dried chives
Preparation
Prepare the citronette by putting the lemon juice in a container, adding a little salt at a time while whisking.
Once the salt is completely dissolved, gradually add the oil while continuing to emulsify until the ingredients are blended.
Finally, add the chives, continuing to whisk.
Put a griddle on high heat, when it’s very hot, place the salmon trout fillets flesh side down.
Cook for about 3 minutes, then turn to the skin side and cook for about 6 minutes, sprinkling the surface with the citronette.
Serve, sprinkling with chives and two teaspoons of citronette.
