Peach Overnight Porridge

Peach Overnight Porridge, a fresh, light breakfast ready in a flash, the perfect solution for summer mornings.

The base is the classic overnight oats, with small rolled oats, cow’s milk, and a tablespoon of chia seeds, which during the overnight rest give a naturally thick and velvety texture. Maple syrup adds sweetness without overpowering the fruit’s flavor.

The true stars, however, are the nectarines: ripe, juicy, diced, and layered between layers of porridge, so you find them in every spoonful. Fresh and sugary, they perfectly match the creaminess of the oats, making this breakfast not only healthy and nourishing but also delicious.

Perfect to enjoy plain or enriched with nuts, coconut, yogurt, or a pinch of cinnamon, this summer porridge is also easily customizable with plant-based drinks for those who prefer a lactose-free or 100% plant-based version.

A no-cook, quick, and convenient recipe that lets you start your day on the right foot — even when time is short.

FAQ

  • Can I use a plant-based drink instead of cow’s milk?

Yes, absolutely! You can substitute the milk with any plant-based drink: almond, soy, oat, or coconut. The quantity remains unchanged.

  • Can I use canned or frozen peaches?

Yes, if you don’t have fresh peaches, you can use canned peaches (drained well) or frozen ones, letting them thaw before using.

  • How long does the overnight porridge keep in the fridge?

It keeps well for 2 days in an airtight container. After 24 hours, the fruit might soften, but it will still be great.

  • Is it suitable for those on a diet?

Yes! It’s a balanced breakfast, rich in fiber, and naturally sweet. You can adjust the maple syrup or replace it with a sweetener of your choice.
