Banana Pancakes

If you want to prepare a hearty and delicious breakfast, I recommend making Banana Pancakes. They are truly delicious and can be enjoyed with chocolate topping, cream, banana slices, maple syrup, or simply on their own. I guarantee they don’t need any additions!

  • Difficulty: Easy
  • Cost: Budget friendly
  • Preparation time: 30 Minutes
  • Portions: 13/15 pancakes
  • Cooking methods: Stove
  • Cuisine: Italian

Ingredients

  • 1 Egg
  • 2 3/4 cups All-purpose flour
  • 2 1/8 cups Milk
  • 3 tbsps Butter
  • 1 tsp Baking powder
  • 1 pinch Salt
  • 1 tbsp Sugar
  • 2 Bananas (about 8.8 oz peeled)
  • as needed Butter (spray)

Preparation

  • Peel the bananas (about 8.8 oz peeled), place them in a bowl, and mash them well with a fork until you get a puree.

  • Add the egg and incorporate it into the banana puree by mixing with a fork.

Now add the milk and melted butter, beat with the fork until everything is well blended.

  • Gradually incorporate the sifted flour with baking powder, sugar, and finally the pinch of salt.

Beat with a whisk until the mixture is smooth.

  • Turn the gas on medium heat, spray the pan with butter spray (mine is 7 inches in diameter), pour in a ladle and a half of batter.

I usually use a ladle and a half for pancakes; with these amounts, I make about 13-15.

  • As soon as bubbles appear on the surface, it’s time to flip the pancake; cook for about a minute on the other side.

The pancakes should have a nice golden color.

Serve hot with your preferred toppings.

Tips/Advice

With these amounts and an 18 cm diameter pan, you won’t get very thick pancakes, but of course, it depends on your taste.

For these pancakes, I used two bananas for a total of about 8.8 oz peeled.
